peking duck for new year's eve

Its the 30th and I'm attempting to cook PEKING DUCK at home....
Too early for prep's for New Year's eve? Yeah, according to cooking experts i need to hang and let the duck crisp its own skin in 24hrs. oh yeah .... 24hrs!  Sounds simple but its not.... Im currently in the process of letting the duck marinate from HONEY-LIME-DARK SOY SAUCE-SHERRY.

I'll be posting  step by step cooking procedure by tom maybe hehehhehe! for now let me do some of the expert tricks to make our yearly media noche extra special....


By the way Peking Duck signifies Fidelity in Chinese ..... (gottah get busy now with my ducky)

Corned Pasta

One of the easiest and delicious pasta, you can cook anytime of the day.




You will need:


• 1 500grams Corned Beef
• 3 Tablespoon Olive Oil
• 1 Cup Sundried Tomato
• Salt n’ Pepper
• 2 Tablespoon crushed Garlic
• 2 tablespoon chopped Shallots
• 500 grams Spaghetti Noodles (cooked)








Lets Party:


- Sauté Garlic and Shallots in Olive Oil, Add Corned Beef and Sundried Tomatoes, Seasoned with salt n’ Pepper.
- When cooked toss pasta with the sauce …. Wollah!

Isn't Easy? :D

Mixed Greens with Honey Mustard Dressing

One of my entrée in our recent BBQ Party….








You will need:

1 Bunch of Romaine Lettuce
1 Bunch of Iceberg Lettuce
2 Cups sliced Cucumber
4 tablespoon Dijon Mustard
1 tablespoon Honey
3 tablespoon Mayonnaise
3 Tablespoon Chopped Garlic
Dash of Salt n’ Pepper










Lets Party:


• Mixed Greens and Cucumber set aside
• Mixed Dijon Mustard,Honey,salt n’ pepper and Mayonnaise
Serve Cold






Its Christmas Season, parties are everywhere. Last weekend my childhood friends with their husband celebrated a BBQ Theme Christmas Party at Pia’s House… I choose to prepare 3 menu for our potluck. I cooked this Cajun Steak, Mixed Greens with honey mustard dressing and my Corned Pasta.



Let me share my Cajun Steak cooked in 2 ways…









You will need:


• 1KL Pork Loin

• 3 Tablespoon Cajun Powder

• ¼ cup Chopped Garlic

• 1 teaspoon crushed Peppercorns

• 1 cup A-1 Steak Sauce

• 1 cup butter






Let’s Party:

• Mix all the ingredients except Butter
• On a heated pan, melt butter and sear the meat.

• When the meat turned its color into brown, Grill it turning both sides.

• Brushed with remaining marinade until its cooked. ( I prefer medium rare)

We always love Ongpin ! It is were the Best and AUthentic Chinese Restaurants are to find.




Coming from a family who loves to eat, we always been an Ongpin-Binondo (or chinatown) frequent visitor . Those little stalls that would sell fried Quikiam, siomai and Siopao along the street are the best... not only that Ongpin in Binondo has its own appeal that would make you come back over and over again, its something about the story behind this place i guess.


Authentic Chinese Restaurants such as President,Golden Fortune, Maxims and SKy Dragon to name a few are my personal Favorites... Vegan Fast fud are also available along the streets of T. Pinpin St. , Sincerity Chicken at Yuchengco St. and New Toho in Dasma St..... while Authentic MAMi (noodles) and Siopao are still a favorite and available at Masuki and Mamosa....Mr. Ube, famous for his hopia and mooncake recently opened his new noodle house near Binondo Church. I tried their TOMYAM soup and its really good...






I would love to stroll along the busy streets of escolta to Ongpin all the way to T. Pinpin and Padilla St. and see those huge chinese signboards offering different kinds of dishes they are knowned for... Live eels,abalone, turtles, sharks and seahorses are common in this place.




A lot of stores sell rice cake or commonly known as TIKOY, which is very popular during months of dec-feb, Hopia stalls are rampant (the best HOPIA BABOY and MONGGO is only available here).



Insense are scattered all over the place,keeping those Good vibes and at the same time eliminates those negative vibes. Chinese Medicinal drugstores are available each corner of the streets (im a self confessed fan of this diet coffee's and tea's)HIHIHI... You would also see chinese community having their daily buddhist rituals, temples are also visible...




DIMSUM's- finger food chinese version of Canape, naks!. HAKAO (Hubbys favey), sharks pin siomai,Fried and steamed Dumplings,Fried Gow Gees,Machang, Seafood ROll in Seaweed, Spareribs in tausi and the all time favorite chicken feet....



Suckling PIG, Roast duck, Pork Asado are hangged to make it inviting to passers by (available at maxims everyday)... Asado, Pata TIm,King dao Pork Noodles and Braised Beef,as well as congee, soup No. 5 (made from bulls penis or testes)-(APHRODISIAC to mga teh) and Bird's Nest Soup (made using the nests of swiftlet - birds who live in dark caves and make their own nests using its saliva to form its nest).



For Desserts Buchi or Sesame balls, Momo chacha, almond jelly are just a few of those mouthwatering desserts available only in ONGPIN.

my no bake lemon cheescake

For the Crust:
  • 2 cube butter (room temperature) 226 grams
  • 1/2 cup brown sugar 119 grams
  • 2 cup flour 280 grams
  • 1/2 sliced almonds 45 grams

  • 2 small box Lemon Jello
  • 2 cup hot water
  • 2 8oz. cream cheese (room temperature)
  • 1/2 cup sugar
  • 1 pint whipping cream 



Lets Partee:
 
  1. In a bowl ,combine butter and brown sugar and whip until creamy. Add flour. With a pastry blender, mix the flour into the butter. Add sliced almonds and mix well.
        
  2. Press into a greased 9X13 pan.

     
  3. Bake at 350 for 10 min.
     
  4. Dissolve jello in hot water and cool.

     
  5. Whip cream cheese and sugar with a wire until it becomes very creamy.

     
  6. In a separate bowl, whip 1 pint whipping cream until it becomes fluffy.

     
  7. Combine cooled jello and cream cheese mixture and whip until the color looks even. Then fold in whipped cream to the jello mixture.

     
  8. Pour on top of the cooled crust and refrigerate until set.

Maryland Fried Chicken

Because we crave for Breaded Fried Chicken , I made this Maryland F.C.   to suffice the unexplainable cravings :D... and we love it to the bones....









You will need:

  • Cut chicken into pieces
  •  Oil
  • Salt n' Peppa
  • Cornstarch
  • 1 Cup Evaporated Milk
  • 1 Beaten Egg
  • 4 Tablespoon Water



Let's Partee:


- Mix all ingridients except for the chicken, set aside.
- Then dip each chicken parts to batter and fry... wallah....Chicken Maryland Ready to Serve!

my Cheesy Smoked Canadian Porkloin Submarine Sandwich

Oliver's Super Sandwich inspires me to make my own version of submarine sandwich aside from which is my husband's love for sandwiches, name it any sandwich can make my husband super happy :D




My version of submarine Sandwich is consist of mustard, cheese spread , veggies  and smoked porkloin (I bought from a deli shops in makati.  Let me share you how to make your deli sandwich at the comfort of your home....






what you'll need is :

1 pack of smoked canadian porkloin
1 French Bread
2 Tablespoon of dijon mustard
2 tablespoon Chizwiz or any cheese spread
Bunch of Romaine Lettuce
Sliced Cheddar or any Cheese available
2 Sliced Tomatoes
1 whole sliced Cucumber
1 tablespoon melted butter
salt n' pepper





Let's Partee:


- Put melted Butter in a frying pan , heat French Bread, set aside
- Spread Mustard and Cheese spread
-  Assemble filling depending on your preference
- Season with salt n'pepper

The Kikiam tastes good... its not starchy and oily maybe because the manong vendor used class A kikiam, unused oil and a strainer to extract those supeer extra oils. The sauce was a little bit sour but it does compliments the sweetness of the other sauce when mix... Not to bad for P10 per stick...

Instant Pancit Canton Made extra Special

I've been an instant pancit canton fanatic since it was invented.... It made one hungry stomach full anytime , every hour and every minute of the day. All u need is a Boiling Water and wallah.... instant meal ready to munch. Here's how i made my simple instant pancit canton looks so delish u will ask for more. An all time comfort food for me and my husband....






1-2 Instant Pancit Canton ( Kalamansi & Hot Spicy flavah)
sliced leeks
2 hard boiled eggs
knorr seasoning (optional)


Here's How:


1. Cook Pancit Canton according to package direction;
2. Add a drizzle of Knorr seasoning then sprinkle leeks
3. Put sliced egg on top







Serve HOT!

crispy tengga sisig






2 Sundays ago, my brother invited us for a family dinner ...It was my 5th time visiting the restobar, but its only this time that i tasted their sisig.... its crispy and its not overwhelming.I wanted to try cooking it but i bought the wrong part hihihihi... so instead of imitating the said sisig ,it turned to be a crispy tengga ala SISIG ....



YOU WILL NEED


1. A KL. OF PIG'S EARLOBES (TENGGA in tagalog)
2. 1/2 Cup Garlic
3. 1 Cup Chopped Onions
4. 1 Egg
5. Salt and Pepper
6. Soy Sauce







LET'S PARTEE:



- Boil Tengga until its Half-cooked, then chopped (according to your preferrence.
-Saute garic and onions, add tenggah and season with salt and pepper.. add soy sauce
- Heat sizzling plate
- Add Butter on the sizzling plate then pour in the tennga then top with egg.
- Seasoned with Maggi Savor , Hot Sauce and Calamansi


- - - > ideal BEER Match

Garlic Meatballs SPaghetti in Sundried and Basil Sauce

Saturday night and its my husbands niece birthday.. I'm thinking of something to cook, and so this simple and delish pasta dish first come in mind... having all the ingredients available at home, i successfully cooked it with no fuss hihihi.... Again sharing my Garlic Meatballs Spaghetti in Sun dried Tomatoes and Basil Sauce,







You will need :



3/4kl. mix ground pork and beef

1/2 cup chopped garlic

1kl spaghetti noodles

1pc. grated carrots

1cup grated cheese (any available will do)

1/2cup sundried tomatoes

1/2cup chopped basil

1 1/2 cup tomato sauce

1/2cup water

dash of salt and pepper

oil for frying

1 egg






LET'S PARTEEE:



1. Mix Ground meats with egg,carrots and garlic, season with salt and pepper, Form into balls then fry.



2. Cook Pasta according to package instructions. Set Aside

3. Saute garlic add tomato sauce and cheese, stir until it boils... Add meatballs, sundried tomatoes and water, then add pasta noodles, season with salt and pepper and topped with fresh basil...






OLAH!

walas-BISTEK TAGALOG

My husband was on a protocol confinement @ Makati Med, when we tasted Bistek Tagalog, After work he fetch me in the office, were both hungry so we had our late lunch at Makati Med's Floating Restaurant, we ordered rice, bistek tagalog and stir fry veggies... We were so bitin with the bistek tagalog so my husband told me that he wanted the same viand for dinner.

I went home and leave him  inside his rm @ at the 8th/f .... went straight to market and bought my ingredients for this beef recipe... and that's it :D





You will need:


1kl. Sirloin
3 BIG onions
1/2 cup Calamansi JUICE
3/4 cup SOY SAUCE
crushed pepper & salt to taste
oil for frying


Let's Partee:

- marinate sirloin with soysauce,pepper and calamansi juice
- fry onions until its medium cooked
- after 10mins fry sirloin until its tender
- on the same saucepan add marinated sauce then add beef when sauce thickens put the onion on TOP....

lemoned chickies

It was during our Pamamanhikan when i get really interested in making my own version of "Lemon Chicken"... I love its Tangy Flavor of the sauce matched with the crispiness of the chicken... I never been a chicken breast fan but with this recipe i can eat as much as a kilo of this chicken part. Enjoy my Version of Lemoned Chickies....








YOU would need :


Ingredients for 3 ~ 4pax
  • 1 lb. (450 grams) chicken breast or chicken tender
  • 1/2 tsp salt
  • 1 tsp. sesame oil (Asian)
  • 2 tsp. rice wine(sake) or sherry
  • 2 tsp. corn starch
  • 1egg
  • 1 lemon (sliced thin)
  • 1 yellow onion
  • salad oil to fry chicken
  • 1/4 tsp. chicken bouillon in powder or granules
  • 1/4 head of lettuce (optional)
  • sliced leeks for garnishing
For the Sweet and Sour Sauce (This is more than enough for this recipe, but you can keep the left-over sauce in a glass jar in a refrigerator for months. This sauce is good for pot stickers or spring rolls. If you want to make more, use this recipe.
  • 1/2 cup sugar
  • 1/4 cup catsup
  • 3 tbsp. pineapple juice or orange juice
  • 3 tsp. vinegar (white)
  • 1/2 tsp. soy sauce
  • 1 tbsp. cornstarch
  • 1 tbsp. cold water




    LETS PARTEE:
    1. If you have chicken breast, (Skip 1. if you have chicken tender), separate chicken pieces into two halves and open them . This levels out the thickness so they will cook evenly.
    2. Marinate chicken 30 minutes with:
      1/2 tsp. salt
      1 tsp. sesame oil
      2 tsp. rice wine(sake) or sherry
      2 tsp. corn starch
       
    3. Wash 1/4 head of lettuce and cut it thinly and spread out on the serving plate. (optional)
    4. Slice a yellow onion.
    5. Slice a lemon thinly.
    6. Bring to boil:
      1/2 cup sugar
      1/4 cup catsup
      3 tbsp. pineapple juice or orange juice
      3 tsp. vinegar (white)
      1/2 tsp. soy sauce
    7. Add to thicken 1 tbsp. cornstarch mixed in 1 tbsp. cold water. Set aside.
    8. Break an egg over the marinating chicken and mix well. Dip chicken pieces in cornstarch and shallow fry.
    9. Heat a wok over a high heat. Put 2 tbsp. salad oil and, when it is very hot and slightly smoking, add sliced yellow onion and stir fry quickly at high heat to let it slightly burn. Add 1/4 tsp. chicken bouillon in powder and reduce heat to cook thoroughly. ( Don't over cook till juice comes out of onion and becomes soggy) In the last 15 seconds of stir-fry, add lemon sliced
    10. Pour the onion and fried chicken over the lettuce and pour sweet and sour sauce as needed.

      eggplant rollatini

       For the LOVE for Pasta.. here is one of my favey pasta dish......





      You would need the FF:

        1-2Large Eggplant
        Salt

        For the SAUCE:

       
      1 tablespoon olive oil
      3/4 cup onions, chopped
      2 cloves garlic, minced
      14.5 oz. can tomatoes, whole and peeled (undrained)
      1-1/2 tablespoons tomato paste

      FILLING:
      14 oz. Tofu, water packed firm
      1/3 cup basil, chopped
      1/8 cup parsley, chopped
      3 cloves garlic, minced
      salt and pepper – to taste

      Cut the eggplant lengthwise into 12 slices (1/8 to 1/4 inch thick). You can peel the eggplant but it is not necessary and the skin actually helps hold the rolls together. Discard the end slices that are mostly skin. It’s fine if some slices break apart, you can piece them together later for the rolls. Salt each slice lightly and place in a colander to drain and “sweat” while you cook the sauce. This will drain some of the mositure in the eggplant so that it gets soft when you bake it.

      While the eggplant sweats, prepare the sauce. In a 2-quart saucepan heat the olive oil over medium-high heat. Add the onions and 2 cloves of the garlic and saute until softened, about 2 minutes. Add the canned tomatoes, with liquid, and break them up with the back of a spoon, or a potato masher. Stir in the tomato paste and 1/4-teaspoon salt. Bring to a boil. Reduce heat and simmer, uncovered, 20 minutes, stirring occasionally.

      While the sauce is simmering, preheat the oven to 375º F and prepare the filling. In a medium bowl, combine together the tofu, basil, parsley, 3 cloves garlic, salt and pepper. Use your hands or the portato masher to mix well.

      Rinse the salt off each slice of eggplant and pat dry with a paper towel. Brush each side of the eggplant slices generously with olive oil and place on a cookie sheet lined with foil. Broil each side for 5 minutes (there is no need to add more oil when you flip the eggplant slieces). Remove eggplant from the oven and let cool.

      To make the rolls, start by lining the bottom of a 9-inch square-baking dish with a layer of the sauce. Lay out a slice of broiled eggplant and place 3 tablespoons of the tofu filling on the thick end of the eggplant slice. Roll the slice up to completely encase the filling and place, seam side down, into the baking dish. Repeat until all the eggplant slices are used. You can piece together torn slices to make the rolls. When the baking dish is filled, top the rolls with the remaining sauce. Bake, uncovered, for 15 minutes at 375º F, or until tofu is heated through.
      Note : For no Bake Lasagna u can steam it and wait till cheese melts... and still enjoy its mouthwatering taste...



      Chinese Chicken Salad

      Simple, Delicious and yet Healthy FOOD? Easy... you just need to have the following Ingridients ready and start the partee rolling :D You Need : Lettuce (anykind) Fried Wanton wrappers 1 cup Julienne Carrots Scallions Basil Toasted Sesame Seeds Cilantro Leftover Grilled Chicken Breast Sweet and Sour dressing Lets Partee: Shred lettuce and crispy wontons tossed with julienne carrots, scallions, basil, toasted sesame seeds and fresh cilantro in a spicy sweet-and-sour sesame dressing topped with grilled chicken breast. Serve with a BIG SMILE :D

      Mhie Menudo Espesyal

      This dish is common to all Filipino Families... we serve this during Feast's or any occasion that would require a tomato based dish. What i love about this dish is its versatility, you can eat it with rice or eat it with a slice of bread... its a Pinoy style stew you can enjoy anytime of the day....






      You will need :


      tomato paste
      1kl pork - sliced into cube
      1/2kl Pork Liver
      1 gloves chopped garlic
      1 chopped onion
      1/2 diced potatoes
      1/2 diced carrots
      1/2 bell pepper
      grated cheese
      1/2 raisins
      1-2 cups weter or any available soup stock
      10 pcs. calamansi
      1 cup soysauce
      3 pieces laurel leaf
      Boiled eggs -optional
      salt n' pepper to taste







      LET's Partee::::

      -  Mix soysauce and calamansi , marinate pork and liver then refrigerate for half an hour.
      -  On a separate pan fry bell pepper,potatoes and carrots until browned then set aside.
      -  Saute garlic and onion
      -  Add marinted pork when half cooked, add 1 cup of water, left over sauce of the marinade,then pour in the tomato paste and tomato sauce and add in remaining ingredients let it boil.
      -  Wait until the sauce thickens then add fried veggies, let it simmer for a minute before adding boiled eggs (optional).
      -  Add a pink of salt n' pepper to taste.
      - Serve with hot rice or a loaf of bread...

      Stuffed French Toast


      One Melting Stuffed French Toast for my Hubby :D




      I'm not a sandwich nor a BREAD addict but my husband does.


      So here i am trying to make diff. kinds of sandwiches...





      Sharing one of the so many sandwiches that i made specially for my partner...




      STUFFED FRENCH TOAST

      1 cup diced Bacon or Ham
      1/2 cup Bell Peppers diced
      Butter
      Big Loaf of Bread
      1 Egg
      Quickmelt Cheese
      Evaporated milk


       Lets start the Parteee:

      1. Saute Bacon  or Ham in a oil free skillet , add bell peppers then set aside.
      2. Mix egg with milk and stir until well mixed.
      3. Dip bread on both sides, put sliced quickmelt cheese and ham/bacon, pimiento filling.
      4. Fry until golden brown or until cheese melts.





       



      Enjoy! One hearty sandwich coming UP :D

      Im crazy about starbucks pan roasted porkloin sandwich

      Yeah, I've been eating this delish sandwich for 4 straight days already... i just love the creamy mayo with juicy bell peppers on it, the prokloin taste just right for the crunchy borders of the canadian bread toasted to perfection. 

      It was last  monday when my husband reported for work, he thought he would be late for our lunch date so he decided to bring something for me (call it bribery dahlin:D). I was so full with my chicken bbq lunch courtesy of the ever friendly food chain Jollibe :D. This Porkloin sandwich was so inviting, i grab it and enjoy it while playing sorority life @ facebook...... It was so good i wanted it for dinner... but my husband said he likes to eat rice, but he promise that tomorrow he will buy me the same sandwich again.





      the bread is so good and u can hear its crunchy sound each bite.

      you can actually share it with somebody, the same way i do

      Steak Tofu

      I have tried different ways on how to enjoy TOFU, and i find it really interesting that a plain bean curd could transform into a gourmet dish. There are many ways how to enjoy your TOFU, firm, soft or semi soft it maybe as long as u have kikkoman or other sauces that can compliment its taste, ull definitely enjoy eating it over and over again.






      Here's one of what ive discovered... last night my husband and our neighbor Mark... My friends husband were having some drinking session, they have peanuts in between drinking. Obviously i dont like the idea of having just peanuts on the table so i grab 1 pound of firm tofu, dredge it with potato starch which i bought from a japanesse grocery then fry it, when all are cooked i set it aside then, from the pan were i fried the tofu, i added mirin and kikkoman then let it boil until the sauce turns into a sticky sauce, i pour it all over the fried tofu then drizzled some bulldog sauce and added chili flakes, chopped parsley, katsuobushi flakes and negi. wollah.... Now my husband and our friends can enjoy the luxury of eating in a japanesse store in the comfort of our home...






      for the ING. you will need:

      mirin sauce
      kikkoman
      katsuobushi flakes
      negi
      firm tofu
      bulldog sauce
      potato starch
      oil for frying
      chili flakes




      chili con Armie



      Im not a fan of mexican food but this mex dish amaze my taste bud, so i tried cooking it myself at home and made my own version using chicken instead of BEEF.



      You will need :


      1 medium onions , chopped
      1 stalk celery chopped
      1 bell peppers , 1 each, red, green
      3 cloves of garlic, finely chopped
      1 and 1/2 pounds chicken breast
      1 10oz. cans tomato sauce
      1 20 oz. can stewed tomatoes
      1 12 oz. jar chili salsa
      2 teaspoons ground chile
      1 teaspoon ground cumin
      salt and pepper to taste
      1 cans dark red kidney beans
      1 can lima beans
      1 can chili beans (pinto)
      1 cup grated mozarella / any cheese 




      Lets PARTEE :D


      Saute onions, garlic and bell peppers. Brown all meat. Stir in remaining ingredients, bring to a boil and lower the heat to simmer for 2 hours, covered. Stir often. Add water as needed. When cooked top with grated melted cheese... serve HOT!

      my Husband's latest addiction

      My husband loves ice cream, from fancy gelatto to dirty ice cream, anything .... as long as its made out of milk and its cold he would definitely grab a pint...

      When he was diagnosed having this carpal tunnel, we would always visit makati med. for check-ups. Since my office is just beside the hospital we would always pass by this small counter that sells Ice Cream , blizzards and etc.  Hubby  would always have 12oz of blizzard..... his favey? mudpie ... its good but i want the almond flavor... it has big portion of almond nuts....

      COLD Soba

      To match my Agedashi Tofu cravings , I also prepared this So Easy Cold SOBA


      You Need:


      Soba Noodles
      Sauce of Agedashi Tofu







      Lets Partee:

      - Boil Soba , when cooked drained and add ice cube, Serve with Agedashi Sauce and FIGHT! :D






      u may serve it with Gohan & Agedashi...

      Why is that everytime my period comes i always crave for different kinds of food? why is that everytime my period comes im too excited to prepare my own food? Oh well, whatever reasons it may be , all i know is that mommy, rj & UNO and even my friends appreciate what i cook...



      Here's another cravings i have recently... actually just last night .... (and only to find out i already have my monthly visit) hahahah.. seee :D


      So there... here goes 1 out of 2 of my craving's; Presenting my version of "Agedashi TOFU"










      You would need:






      - Firm Tofu


      - Cornstarch


      - Mirin


      - Kikkoman Soy Sauce


      - Leaks


      - Dashi


      - Vegtable Oil


      - Bonito Flakes (optional)






      Start the Partee:


      - Damp Tofu with dry cloth, to squeeze extra liquid,set aside.


      - Mix Dashi,Kikkoman,Mirin and 1cup water , mix well then let it simmer


      - Dredge Tofu with cornstarch until fully covered , then deep fry, set aside.


      - Put cooked Tofu in a platter, topped with sliced leaks the drizzle the sauce on top... Lastly Bonito Flakes can be added to.
